No turkey was stuffed, but nevertheless we are. After searching for recipes I cooked Cornish hens for Thanksgiving. Hadn't fixed them in forever and never had much luck when I did cook them. They usually turned out dry.
But the recipe was good and these turned out so delicious. So was the pumpkin pie I bought at the store, so we're well stuffed.

I had a recipe that you cut the hens in half put the stuffing a ball put the hen on top tent cook. They always come out wonderful. Now I must try to find the recipe.

ReplyDeleteI'm glad you had a nice Thanksgiving. I like to make Cornish hens for my kids. I buy them in a pack of two sometimes when they go on sale. They love having their own "baby chicken" for dinner. :)

ReplyDeleteThose Cornish hens look nice and plump. (Like I'm feeling after all that food we ate yesterday...) Our daughter hosted Thanksgiving this year, and they smoked their turkey and had a Honey-baked ham, to boot. Plus just about every side dish known to man... (Okay, slight exaggeration...)

At least you cooked poultry. We had ham, which I burned a little. We were happy the pumpkin pie turned out good...It's a veggie right?
